Bratwurst Cooked in Beer With Smothered Cabbage
- 8 links fresh bratwursts
- 36 ounces beer
- 8 ounces bacon, chopped
- 2 cups onions, julienned
- fresh ground black pepper
- 1 small head of cabbage, cored and shredded
- salt
- 2 tablespoons garlic, chopped
- 12 cup whole grain mustard
- 8 hot dog buns
- Place beer in saucepan over medium heat and bring to boil.
- Add sausages and cook for 10 minutes or until throughly done.
- Remove sausages from the liquid, and reserve the liquid.
- In a large saute pan over medium heat render the bacon until crispy (about 6 - 8 minutes).
- Remove bacon and set aside.
- Discard all the bacon fat except for 1/4 cup.
- Place 1/4 cup of the bacon fat back in the saute pan and add the onions.
- Season with black pepper.
- Saute for 2 - 3 minutes or until tender.
- Add the cabbage.
- Season with salt and pepper.
- Saute for 4 more minutes or until the cabbage is tender.
- Stir in garlic, mustard and 2 cups of the liquid from the sausages.
- Bring liquid to a simmer and cook for 8 - 10 minutes, stirring occasionally.
- Reseason with salt and pepper.
- Place sausages in pan and cook for 2 minutes on each side.
- Serve sausage on top of a hot dog bun, smother with cabbage.
