Bratwurst Cooked in Beer With Smothered Cabbage

  1. Place beer in saucepan over medium heat and bring to boil.
  2. Add sausages and cook for 10 minutes or until throughly done.
  3. Remove sausages from the liquid, and reserve the liquid.
  4. In a large saute pan over medium heat render the bacon until crispy (about 6 - 8 minutes).
  5. Remove bacon and set aside.
  6. Discard all the bacon fat except for 1/4 cup.
  7. Place 1/4 cup of the bacon fat back in the saute pan and add the onions.
  8. Season with black pepper.
  9. Saute for 2 - 3 minutes or until tender.
  10. Add the cabbage.
  11. Season with salt and pepper.
  12. Saute for 4 more minutes or until the cabbage is tender.
  13. Stir in garlic, mustard and 2 cups of the liquid from the sausages.
  14. Bring liquid to a simmer and cook for 8 - 10 minutes, stirring occasionally.
  15. Reseason with salt and pepper.
  16. Place sausages in pan and cook for 2 minutes on each side.
  17. Serve sausage on top of a hot dog bun, smother with cabbage.
