Corrin's Leftover Salad
- 12 head lettuce
- 0.5 (15 ounce) can beets (sliced or chunk)
- 12 cup cooked frozen peas
- 3 hard-boiled eggs
- mayonnaise
- salt and pepper
- Tear lettuce into bite size pieces.
- Chop hard boiled eggs.
- Toss all add peas and beets.
- Add enough mayo just to blend.
- Season with salt and pepper to taste.
- Chill serve cold.
