Black and White Peanut Butter Brownies
- 1 cup good quality white chocolate, chopped
- 4 tablespoons butter, cut into pieces
- 34 cup granulated sugar
- 2 teaspoons vanilla extract
- 12 teaspoon salt
- 2 large eggs
- 13 cup smooth peanut butter or 13 cup chunky peanut butter
- 1 14 cups unbleached all-purpose flour
- 12 teaspoon baking powder
- 1 cup semisweet chocolate chunks or 1 cup chopped chocolate
- Preheat the oven to 350F Lightly grease a 9x9 pan.
- Melt butter over low heat.
- Remove it from the heat and stir in the chopped white chocolate.
- Keep stirring until the chocolate softens.
- Stir in the sugar until well blended.
- Add the vanilla and salt.
- Mix well.
- Let the mixture cool to lukewarm.
- Beat in the eggs, one at a time.
- Add the peanut butter and beat till incorporated.
- In a separate bowl, whisk together the flour and baking powder.
- Stir into the egg mixture.
- Stir in 3/4 cup of the chocolate chunks.
- Spoon the batter into a greased 9" square pan, and sprinkle the remaining chocolate chunks over the top.
- Bake the brownies for 25 minutes, until they're light golden brown and the edges pull just slightly away from the pan.
- Remove from the oven, and cool before cutting.
