Eel Kabayaki with Grilled Chikuwa

  1. Cut the chikuwa into half lengthwise.
  2. Make a cut inside, too.
  3. Coat with katakuriko well.
  4. Mix the seasonings.
  5. Heat a frying pan with vegetable oil and sesame oil.
  6. Cook the chikuwa for both sides, like you're pushing them around the pan.
  7. When the surface becomes crispy, add the seasonings.
  8. Turn up the heat to evaporate the sauce.
  9. It's done.
  10. Sprinkle on sansho pepper if you want.
