Date-Nut Granola

  1. Preheat oven to 350 degrees F.
  2. Combine oats, barley flakes and almonds in a large bowl; set aside.
  3. Combine oil, honey and vanilla in a small bowl.
  4. Pour honey mixture over oat mixture; stir well.
  5. Pour into large baking pan.
  6. Bake about 25 minutes or until toasted, stirring after 10 minutes, then every 5 minutes.
  7. Stir in dates while mixture is still hot.
  8. Cool.
  9. Store tightly covered.
