AMIEs Sweet & Sour SHRIMP
- 1/2 kg fresh shrimp
- 2 eggs, slightly beaten
- 1/2 cup all-purpose flour
- 1 cup pineapple chunks
- 6 pcs. sweet pickles, sliced (optional)
- 1 green or yellow bell pepper, diced
- 1 clove garlic, chopped fine
- 1 carrot, cut in rounds
- 1 medium onion, sliced
- 1/2 tsp salt
- 1/2 cup broth or water
- 1 tbsp cornstarch dispersed in 1 tbsp. water
- Make a batter with flour, eggs and salt.
- Dip shrimp in batter one at a time.
- Fry in hot cooking oil for a few minutes.
- Remove and drain in absorbent paper.
- In frying pan, saute garlic and onions until golden brown.
- Return shrimp to the pan, add pineapple chunks, sweet pickles, pepper, carrot and broth.
- Cover and cook for 10 minutes over low medium heat.
- Prepare "sweet and sour" sauce and pour in the pan.
- Let boil uncovered for 5 minutes.
- Thicken with cornstarch.
- Serve hot.
