Tomato Mango Salsa

  1. In medium bowl, combine tomatoes, chile, mango, red onion and ginger.
  2. In small saucepan over medium, heat olive oil.
  3. Add coriander seeds and cook for 1 minute.
  4. Remove from heat and stir in vinegar and salt.
  5. Pour warm spice mixture over tomato mixture.
  6. Let stand 30-60 minutes.
  7. Serve with vegetables, Mexican food or place in blender and chop for a gazpacho.
