Four Nut Fish
- 4 ounces fish, of the day whats in season
- 14 cup peanuts
- 1 ounce cashews
- 1 ounce almonds
- 1 ounce pecans
- 1 ounce sesame seeds
- 14 cup milk
- 1 egg
- 18 cup sesame oil
- 18 cup flour
- 1 ounce dark beer
- 1 ounce soy sauce
- 1 ounce oyster sauce
- 2 ounces white wine
- Make egg wash by combining egg and milk.
- wet fish in egg wash
- Make crust mix by combining 50% peanuts and equal parts of almonds, cashews, pecans and sesame seeds.
- roll fish in nut crust mix
- Make sauce by combining dark beer, soy sauce, oyster sauce and white wine.
- fry fish in med hot oil until crisp
- drizzle lightly with sauce.
