Chicken in Tomatillo Sauce

  1. Place pumpkin seeds in large skillet; cook and stir on medium heat 2 min.
  2. or until lightly toasted.
  3. Spread onto paper towel; cool.
  4. Meanwhile, place chicken in large skillet.
  5. Add broth; cover.
  6. Cook on medium heat 15 min.
  7. or until chicken is cooked through, stirring occasionally.
  8. Remove chicken from skillet, reserving 3 cups of the broth; cover chicken to keep warm.
  9. Pour half of the reserved broth into blender.
  10. Add half each of the pumpkin seeds, tomatillos, cilantro, onions and cracker crumbs; cover.
  11. Blend until smooth; pour into skillet.
  12. Repeat.
  13. Cook on medium-high heat 5 min.
  14. or until heated through, stirring occasionally.
  15. Reduce heat to low.
  16. Add sour cream; stir until well blended.
  17. Return chicken to skillet; cover.
  18. Simmer 10 min.
  19. or until heated through.
