Slower Cooker Potato Soup
- 6 cups cubed potatoes (we leave peelings on but feel free to peel)
- 5 cups water
- 2 cups chopped onions
- 1 stalk celery, chopped (about 1/2 cup)
- 1 carrot, thinly sliced
- 14 cup butter
- 5 chicken bouillon cubes
- 1 teaspoon fresh ground pepper
- 14 teaspoon ground cumin (feel free to use more or less)
- 14 teaspoon cayenne pepper (feel free to use more or less)
- 1 teaspoon minced bottled garlic
- 1 (12 ounce) can evaporated milk
- 3 tablespoons fresh parsley, chopped
- Spray large slow cooker with cooking spray.
- In slow cooker, combine all ingredients except evaporated milk and parsley.
- Cover and cook on high for 2 hours and then turn on low for 5 hours.
- Add milk and parsley.
- Mix well.
- Cover and cook additional 30 to 60 minutes longer.
