Giant Oreo Cake
- 150g OREO* Original Cookies , crushed
- 3/4 cup sugar
- 1/2 cup self raising flour
- 1/2 teaspoon salt
- 3 eggs, separated
- 100g (1/2 cup) dark chocolate, melted
- 1/2 cup water
- 1 teaspoon vanilla extract
- 2 cups cream, whipped
- 2 tablespoons icing sugar
- drinking chocolate, to serve
- Combine crushed Oreo* cookies, sugar, flour, and salt; set aside.
- Beat the egg yolks with an electric mixer on high until light and fluffy.
- Combine the melted chocolate, water and vanilla.
- Fold in flour and chocolate mixes into the beaten yolks.
- Beat the egg whites until stiff, gently fold into batter.
- Spoon the batter into 2 x 20cm greased and lined cake tins and bake at 180C for 25 minutes or until a skewer inserted in the centre comes out clean.
- Combine the whipped cream and icing sugar.
- Spread the cream over one layer, top with the second cake and spread cream over top.
- Sprinkle with drinking chocolate to serve.
