Chilaquiles
- 1 medium onion
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 (14 1/2 ounce) can diced tomatoes
- salt
- pepper
- 1 (8 ounce) can green chilies, whole
- corn tortilla
- oil
- 2 cups cheddar cheese, grated
- 1 pint sour cream
- Saute onion and garlic in oil until onion is clear.
- Add tomatoes and salt and pepper to taste.
- Simmer 10 minutes.
- Remove seeds from chiles and slice into 4 inch strips.
- Cut tortillas into triangles and fry in hot oil until crisp.
- Drain.
- Place half of the tortilla chips in a 9 x 13 inch baking dish.
- Layer tomato mixture, chiles and cheese.
- Make a second layer of each, ending with the cheese.
- Heat in oven at 350 degrees for 30 minutes or until bubbling and the cheese is melted.
- Remove from oven and top with sour cream.
- Place under broiler for a few minutes until lightly browned.
- Serve hot.
