Killer Tex-Mex Casserole
- 1 12 lbs hamburger
- 1 medium onion, diced
- 1 green pepper, diced
- 1 (8 ounce) can diced green chilies
- 1 (10 ounce) can enchilada sauce
- 1 (10 3/4 ounce) can chicken broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 (18 count) package corn tortillas
- 1 (8 ounce) packageshredded colby-monterey jack cheese
- Preheat oven to 325 degrees.
- Saute onion and green pepper in butter until soft, remove from pan.
- Add hamburger to pan and cook until browned.
- Add rest of ingredients except tortillas and cheese.
- Heat over medium heat until heat through.
- Coat an 11"x7" pan with non-stick cooking spray.
- Cut tortillas into 1/2" strips.
- Layer 1/2 the tortilla strips on the bottom of the pan.
- Then layer with 1/2 of the meat mixture.
- Repeat tortilla layer and top with the rest of the meat mixture.
- Cover with shredded cheese.
- Bake in a 325 degree oven for 30 minutes.
- Serve with salsa, sour cream, and black olives.
