Day(S) After Turkey Day Stew
- 4 medium potatoes, diced
- 6 carrots, chopped
- 3 celery ribs, chopped
- 1 large onion, chopped
- 2 garlic cloves, minced (or more to taste)
- 3 beef tomatoes, seeded and diced (canned ok)
- 1 12 teaspoons oil
- 4 cups chicken broth, unsalted
- 4 cups cooked turkey, chopped
- 14 teaspoon oregano
- 14 teaspoon sweet basil
- 14 teaspoon thyme, crushed
- salt and pepper (to taste)
- turkey stuffing (optional, *)
- Heat 11/2 tsp oil in a large saucpot.Saute onions til soft; add garlic, carrots and celery.
- Stir-fry for 2-3 minutes.
- Add potatoes, tomatoes and broth to the pot.
- Bring up to a boil, then lower to a simmer for 15 minutes.
- Add turkey and seasonings.
- Cook another 10 minutes.
- Salt and pepper as desired.
- *I love to put a scoop of stuffing in the middle of bowl before adding stew.
- It takes the place of serving a bread portion.
