Bagels, Brooklyn Recipe

  1. Combine 1c flour, yeast and salt in a bowl.
  2. Stir in warm water and honey; beat till smooth, about 3 min.
  3. Stir in sufficient remaining flour to make a soft dough.
  4. Turn out onto a floured surface; continue to work in flour till dough is stiff sufficient to knead.
  5. Knead till smooth and elastic.
  6. About 5 min.
  7. Cover with a bowl.
  8. Let rest 15 min.
  9. Divide into 12 equal parts.
  10. Shape each into a flattened ball.
  11. With thumb and fore finger poke a hole into the center.
  12. Stretch and rotate till hole enlarges to about 1 or possibly 2".
  13. Cover; let rise about 20 minutes.
  14. Boil water in a large shallow pan, about 2"deep.
  15. Reduce heat.
  16. Simmer a few bagels at a time about 7 min.
  17. Remove from pan.
  18. Drain on a towel about 5 min.
  19. Place on a baking sheet; brush with mix of egg white and water.
  20. Bake at 375F 30 min or possibly till done.
