Bagels, Brooklyn Recipe
- 4 c. flour (4 to 5)
- 1 pkt yeast
- 2 tsp salt
- 1 1/2 c. warm water (120-130 degree)
- 2 Tbsp. honey or possibly sugar
- 1 x egg white
- 1 tsp water
- Combine 1c flour, yeast and salt in a bowl.
- Stir in warm water and honey; beat till smooth, about 3 min.
- Stir in sufficient remaining flour to make a soft dough.
- Turn out onto a floured surface; continue to work in flour till dough is stiff sufficient to knead.
- Knead till smooth and elastic.
- About 5 min.
- Cover with a bowl.
- Let rest 15 min.
- Divide into 12 equal parts.
- Shape each into a flattened ball.
- With thumb and fore finger poke a hole into the center.
- Stretch and rotate till hole enlarges to about 1 or possibly 2".
- Cover; let rise about 20 minutes.
- Boil water in a large shallow pan, about 2"deep.
- Reduce heat.
- Simmer a few bagels at a time about 7 min.
- Remove from pan.
- Drain on a towel about 5 min.
- Place on a baking sheet; brush with mix of egg white and water.
- Bake at 375F 30 min or possibly till done.
