Chocolate Mallow Pie Recipe
- 1 env. Knox gelatin
- 3 squares unsweetened chocolate
- 1/3 c. cool water
- 1/2 c. sugar
- 1 teaspoon vanilla
- 2/3 c. light corn syrup
- 1 c. cream, whipped
- Baked pie shell
- Sprinkle gelatin on cool water in top of double boiler to soften.
- Place over boiling water and stir till gelatin is thoroughly dissolved.
- Remove from heat.
- Pour corn syrup in a large bowl of electric mixer.
- Add in the vanilla and gelatin mix.
- Beat on high speed till mix becomes thick and of soft marshmallow consistency, about 15 min.
- Heat chocolate while the mixer is beating.
- Be sure the chocolate cools!
- Mix in the melted chocolate, that must NOT be hot when added to the marshmallow mix.
- Mix in the whipped cream.
- Pour into a baked pie shell.
- Refrigerateat least 4 hrs.
- Serve with whipped cream.
