Alfredo-Zucchini Ribbons

  1. Slice zucchini lengthwise using vegetable peeler, creating long ribbons.
  2. Cook cream cheese spread, milk and 2 Tbsp.
  3. Parmesan in medium saucepan on medium heat 5 min.
  4. or until cream cheese is melted and sauce is heated through, whisking constantly.
  5. Stir in zucchini; cover.
  6. Cook 5 min.
  7. or until zucchini is tender, stirring occasionally.
  8. Sprinkle with remaining Parmesan.
