Roasted Shrimp Scampi
- 1 lb medium shrimp
- 4 garlic cloves, minced
- 1 12 tablespoons melted butter
- 1 12 tablespoons olive oil
- 2 tablespoons white wine
- 1 tablespoon lemon juice
- 1 12 tablespoons parsley, chopped
- 1 pinch salt
- 3 dashes fresh ground pepper
- 1 pinch red pepper flakes
- 3 lemon wedges, for garnish
- 1 parsley (to garnish)
- Pre-heat oven to 400.
- Shelled and deveined shrimp.
- Remove tails or leave on, personal choice.
- Rince shrimp and pat dry.
- Place shrimp in an oven safe baking dish.
- Mix together all the remaining ingredients (except garnish).
- Pour over shrimp and gently combine.
- Place in the middle of the pre-heated oven for 5 minutes.
- After 5 minutes, gently stir and put back in oven for an additional 5 minutes.
- Transfer to serving platter.
- Add lemon wedges (additional parsley).
- Great served over rice or pasta.
