Romaine With Pickled Vegetable Salad
- 6 cups romaine lettuce, torn
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 14 cup giardiniera, rinsed and drained
- 14 red onion, thinly sliced
- 13 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 garlic clove, crushed
- 12 teaspoon kosher salt
- 14 teaspoon fresh ground black pepper
- Toss lettuce with beans, giardiniera, and red onion.
- Whisk together dressing ingredients OR place them in a lidded glass jar and give a good shake.
- Drizzle 4 tablespoons of the dressing over the salad and toss well.
