Baked Lamb Chops
- 4 to 6 Lamb Chops
- 2 Yam or Sweet Potatoes
- 1 big Onion
- 1 head Garlic
- 1 Salt
- 1 cup Red Wine
- 2 tbsp Chopped or Dried Rosemary
- 3 tbsp Olive Oil
- Start by mixing all marinade ingredients: wine, rosemary and 2 tbsp of olive oil, inside the baking dish.
- Preheat oven at 375?F or 180 C
- Add the lamp chops and let is rest for 1 to to 2 hours.
- Or overnight in the fridge.
- Cut the onion in 4 to 6 slices
- Cut the potatoes in round slices.
- Peel the garlic head.
- Add the vegetables in the baking dish together with the marinated lamp chops.
- Leave the marinade sauce in.
- Add some salt, rosemary leaves and 1 tbsp olive oil on top.
- Cover the baking dish with foil.
- Bake it from 30 to 40 minutes at 375?F or 180 C, it depends on how big the chops are.
- Remember to remove the foil after the first 20 minutes.
