Crispy Potato Bites
- 1 whole Egg
- 2 Tablespoons Oil
- 1- 1/2 Tablespoon Matzo Meal
- 1/2 teaspoons Salt
- 1/4 teaspoons Baking Powder
- 1/2 whole Onion
- 6 whole Peeled And Finely Chopped Yukon Gold Potatoes

- Preheat oven to 400F.
- 2.
- In large bowl, whisk together egg, oil, matzo meal, salt and baking powder.
- 3.
- Grate onion and add to mixture.
- 4.
- Add chopped potatoes to mixture.
- 5.
- Spoon rounded teaspoons of mixture into greased mini muffin tins.
- 6.
- Bake 30 minutes or until golden brown.
