Chicken A La Francaise Recipe

  1. While rice is cooking, season chicken with salt and pepper; saute/fry in butter till browned.
  2. Add in onions and mushrooms; continue cooking 2 min longer.
  3. Stir in sherry, peas and broth.
  4. Cover and simmer about 20 min.
  5. Add in tomatoes.
  6. Dissolve cornstarch in mushroom liquid and stir into chicken mix.
  7. Cook, stirring frequently, about 5 min longer.
  8. Serve over beds of fluffy rice.
  9. Serves 6.
