sig's Prawns with Pistachio, Chilli and Garlic Sauce
- 30 large prawns ready cooked
- 1 lemon ,divided into sections or slices for drizzling over
- 4 clove of garlic ,chopped roughly
- 1 large very ripe tomato, quartered and seeded
- 2 small long red chilli, seeded ,roughly chopped
- 4 tbsp unsalted pistachio nuts
- 60 grams chargrilled peppers in oil ,,chopped
- 1 tbsp olive oil
- 1 tbsp rasberry or red wine vinegar
- wash prawns arrange on plates.
- Divide the lemon
- put all other prepared ingredients into blender and work into a semi smooth sauce .
- serve prawns with mixed lettuce, sauce, lemon slices and scatter a few pistachio over top.
- If you want to.make this extra special heat the unpeeled garlic, wrapped in foil and tomato and chilli in preheated oven about 200C/400 f for about 10-12 minutes ,towards 9 minutes add nuts to just heat them through.
- squeeze the garlic out when slightly cooled and add all into blender with rest of sauce ingredients .
