Walnut Pesto Pasta Salad
- 23 cups Walnuts
- 6 cloves Garlic
- 1- 1/4 cup Fresh Parmesan Cheese
- 6 cups Fresh Basil, Lightly Packed
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1- 1/2 cup Olive Oil
- 1/2 whole Lemon, Juiced
- 1/2 cups Mayonnaise
- 2 pounds Pasta Shapes, Cooked, Drained And Cooled
- 2 pints Cherry Tomatoes, Sliced In Half
- 4 cups Fresh Spinach Leaves
- Put the walnuts, garlic, Parmesan, basil, salt and pepper in the bowl of a food processor.
- Pulse until everything is chopped into very small pieces.
- Add the olive oil and lemon juice through the spout.
- Pulse until incorporated.
- Add the mayo and pulse until incorporated again.
- Set aside.
- Toss the pesto and the pasta together in a large serving bowl.
- Add the cherry tomatoes and spinach and toss.
