A Taste Of Taiwan: Make These Pineapple Tarts
- 1 medium pineapple
- 1 cup water
- 1 cup sugar
- 2 1/2 sticks (1 1/4 cups) cold unsalted butter
- 1 1/2 cups all-purpose flour, plus more for dusting
- 1/2 cup cornstarch
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 to 2 tablespoons cold water
- Trim the fronds and base from the pineapple and cut off the tough skin.
- Slice lengthwise in half and then into quarters.
- Cut the thick center core from each quarter.
- Chop the remaining pineapple.
- Place in a saucepan along with the water and sugar and bring just to a boil.
- Reduce the heat to a simmer and cook, uncovered, stirring occasionally, until the liquid has been reduced to a jamlike consistency and the color has turned a deeper, more orange color, about 1 hour.
- Continue to simmer, stirring occasionally, until the mixture is dry enough to pick up with your hand and roll into a ball, about 2 hours.
- Let cool completely.
