A Taste Of Taiwan: Make These Pineapple Tarts

  1. Trim the fronds and base from the pineapple and cut off the tough skin.
  2. Slice lengthwise in half and then into quarters.
  3. Cut the thick center core from each quarter.
  4. Chop the remaining pineapple.
  5. Place in a saucepan along with the water and sugar and bring just to a boil.
  6. Reduce the heat to a simmer and cook, uncovered, stirring occasionally, until the liquid has been reduced to a jamlike consistency and the color has turned a deeper, more orange color, about 1 hour.
  7. Continue to simmer, stirring occasionally, until the mixture is dry enough to pick up with your hand and roll into a ball, about 2 hours.
  8. Let cool completely.
