Honey cashew chicken
- 2 cup red rice
- 4 cup water
- 1 tsp salt
- 40 oz pineapple chunks about two cans
- 10 large chicken breasts boneless skinless
- 1/4 cup cornstarch
- 1/4 tsp ground black pepper
- 1 tsp salt for chicken
- 1/2 cup honey
- 3 tbsp lite soy sauce
- 1 1/2 tbsp red wine vinegar
- 3 1/2 tbsp vegetable oil
- 1 tbsp minced garlic
- 2 large red bell pepper
- 1 1/2 cup frozen Edamame beans, or sweet peas
- 1/2 cup cashews pieces
- Mix the salt, juice, with 4 cups of water boil your rice.
- Cook till water craters form cover and remove from heat.
- Don't lift that lid for 20 minutes
- Cut chicken into bite sized pieces.
- Mix the chicken, salt, cornstarch, and pepper in a bag and shake
- Whisk the honey.
- Soy sauce, and vinegar together in a bowl set aside.
- Heat the oil add the chicken mixture.
- Cook 4 minutes should be browned.
- Add garlic, red pepper, pineapple chunks, and Edamame beans or peas.
- Cook till done about 5 minutes.
- Add cashews stir 2 minutes add honey sauce mixture.
- Serve with rice, hope enjoy!
