Apple-Pecan Dressing
- 2 teaspoons olive oil
- 3/4 cup diced bacon
- 1/2 cup chopped onion
- 1/2 cup celery
- 1 1/2 cups peeled and diced Granny Smith apples
- 1/2 cup pecan pieces
- 1/4 cup chopped parsley
- 1/4 cup chopped fresh sage
- Salt and pepper to taste
- 4 cups cubed day-old bread, cut into 1-inch cubes
- Creole spice to taste-recipe enclosed
- 2 cups of chicken stock
- In a large skillet heat oil and cook the bacon until it's crispy, about 4 minutes.
- Add onions, celery, apples, pecans, parsley, sage, and cook for 3 minutes.
- Season to taste with salt and pepper.
- Stir in the bread cubes, Creole spice, and chicken stock.
- Cook until heated through.
- Remove from heat and adjust the seasonings.
