apple and chocolate empanadas
- 6 apples cored cut into eight slices
- 1 tbsp ground cinnamon
- 1 tbsp Hersheys Dark cocoa powder
- 1 cup sugar
- 1/4 cup dark brown sugar
- 1/4 cup Demerara sugar
- 1 tsp salt
- 1/2 cup cornstarch
- 1/2 cup apple juice
- 10 large discos
- 1 3/4 quart apple juice
- preheat oven to 450F Fahrenheit heat apple juice add cinnamon ,sugar, salt, chocolate let boil 7 minutes add apples
- add cornstarch and half cup of apple juice together mix well add half of solution to apples
- cook 7 minutes add other half of solution
- let cool 7 more minutes let sit off heat 5 minutes
- on a plate spray nonstick so disco won't stick spray baking pan also
- add half teaspoon of brown sugar add apples to disco
- fold and crimp with fork poke 3 holes in top so steam can escape
- sprinkle top with Demerara sugar I sprayed top with nonstick spray so it would stick
- bake 15 minutes
