Apple Orchard Pork Chops
- 2 tsp. vegetable oil
- 4 pork loin chops
- 2 c. apple juice
- 13 c. mustard
- 3 medium apples
- 1/2 c. raisins
- 1/2 c. green onions
- 2 tbsp. cornstarch
- Warm vegetable oil in large skillet over medium-high heat.
- Add pork loin chops, season with salt and pepper and brown 2 to 3 minutes on each side.
- Combine apple juice or cider and coarse-grain mustard in a bowl; pour over chops.
- Cover skillet and simmer 20 minutes.
- Add medium cored, sliced, unpeeled cooking apples, raisins and sliced green onions to skillet.
- Cover and cook 5 to 10 minutes longer.
- Transfer pork chops and apples to serving platter and keep warm.
- Add cornstarch to 1/4 cup water, blend, stir into pan juices and cook until sauce thickens.
- Serve sauce over pork chops and apples, with steamed broccoli or mixed greens on the side.
