Cold Spinach & Parmesan Dip
- 10 ounces, weight Frozen Chopped Spinach, Thawed And Drained Of Excess Liquid
- 1/2 cups Sour Cream
- 5 Tablespoons Mayonnaise
- 1/2 cups Parmesan Or Pecorino Romano Cheese
- 1/4 cups Scallions, Chopped (1/4 Cup Is About 3 Or 4 Stalks)
- 1 clove Garlic, Minced
- 1/4 teaspoons Pepper
- 1 pinch Salt, Or To Taste

- Combine all of the ingredients in a medium bowl.

- Taste test and adjust salt as needed.

- Refrigerate for at least 30 minutes before serving (may be made up to a day in advance).
