Peppermint Meringue Bites Recipe
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon peppermint extract
- 2/3 c. sugar
- 6 tbsp. crushed peppermint candy
- Heat oven to 250 degrees.
- Line cookie sheets with foil.
- In small bowl, beat egg whites, cream of tartar, peppermint extract till foamy.
- Gradually add in sugar 1 Tbsp.
- at a time, beat 3-5 min till stiff peaks form.
- Spoon 1 inch mounds, swirl a little on cookie sheet.
- Sprinkle lightly with peppermint candy.
- Bake at 250 degrees for 25-35 min or possibly till crisp and dry.
- Makes 3 dozen.
