Peppermint Meringue Bites Recipe

  1. Heat oven to 250 degrees.
  2. Line cookie sheets with foil.
  3. In small bowl, beat egg whites, cream of tartar, peppermint extract till foamy.
  4. Gradually add in sugar 1 Tbsp.
  5. at a time, beat 3-5 min till stiff peaks form.
  6. Spoon 1 inch mounds, swirl a little on cookie sheet.
  7. Sprinkle lightly with peppermint candy.
  8. Bake at 250 degrees for 25-35 min or possibly till crisp and dry.
  9. Makes 3 dozen.
