Olives and eggs
- 5 large eggs
- 1/3 cup finely shredded sharp cheddar cheese
- 1/3 cup sliced green olives with pimentos
- 1/2 tsp Herbs de Provence
- 2 tbsp water
- 2 tbsp margarine
- Beat the eggs, set aside.
- Heat the margarine in a large nonstick pan.
- Add eggs let sit 20 seconds add olives.
- Cover with lid.
- After 1 minute add cheese.
- Add water on the edges cover let cook till cheese melts, and eggs cooked on top.
- Tilt pan and gently roll the eggs up.
- Let gravity help in the rolling.
- Cut in half sprinkle tops with Herbs de Provence
- Serve hope you enjoy!
