Parmesan Toasts
- 4 slices whole wheat ciabatta or country bread, sliced 1/2 inch thick
- 2 tablespoons extra-virgin olive oil
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
- Freshly ground pepper
- Preheat the broiler and position a rack about 6 inches from the heat.
- Brush the bread on both sides with the olive oil and set the slices on a baking sheet.
- Toast under the broiler until lightly browned, about 1 minute per side.
- Sprinkle the toasts with grated cheese and season with pepper.
- Broil for about 30 seconds, until the cheese is bubbly.
- Cut the toasts on the bias and serve.
