Black Bean Burritos

  1. In a large bowl mix together the beans, tomato, green onion, and cilantro.
  2. Set aside.
  3. In a small bowl, combine the garlic and the lime juice.
  4. In a slow, steady stream whisk in the oil until the dressing has emulsified.
  5. Combine the lime dressing and bean mixture.
  6. Stir in the crushed red pepper and hot sauce.
  7. Season with salt and freshly ground pepper.
  8. Preheat the oven to 350F Soften the tortillas briefly in the oven; remove from oven.
  9. Spread on the avocado, followed by the cheese, rice, and bean mixture.
  10. Roll up the tortillas and arrange on a baking sheet.
  11. Place in the oven and heat through for 15 minutes or until the cheese has melted.
