California Chile Chicken Salad Recipe

  1. Put dry chiles in saucepan and cover with water.
  2. Bring to boil.
  3. Reduce heat to simmer and cook till chiles are tender, about 15 min.
  4. Drain, cut chiles in half and remove stems and seeds.
  5. Coarsely chop chiles.
  6. Puree chiles, mayonnaise, lime juice, garlic and salt in blender till smooth.
  7. Toss together cooked chicken, onion, celery, jicama and serrano chile.
  8. Stir in chile mayonnaise till thoroughly mixed.
  9. Stir in cilantro.
  10. Cover and refrigerate1 hour to allow flavors to blend.
  11. Garnish with additional minced cilantro.
  12. This recipe yields 4 servings.
