Macadamia Nut Red Snapper Recipe

  1. Dredge fish in flour, shaking off excess.
  2. Heat oil in heavy skillet over medium high heat.
  3. Saute/fry fish till browned, 3 to 4 min per side.
  4. Remove to warming platter.
  5. Bring wine and shallots to boil in a saucepan till slightly reduced.
  6. Add in garlic and boil 30 to 45 seconds.
  7. Add in lemon juice and stir.
  8. Whisk in butter, one Tbsp.
  9. at a time over very low heat.
  10. Add in nuts and parsley.
  11. Season with salt and pepper.
  12. Remove from heat, spoon over fish and serve.
  13. Serves four.
