Black Bean Chili
- 2 cup black beans, soak over nite
- 4 cup water or broth
- 1 small bell pepper, chopped
- 1 medium onion, chopped
- 1 rib celery, chopped
- 2 tomatoes, peeled and chopped
- 1 medium carrot, chopped
- 1 tbsp minced garlic
- 2 small chilies, chopped
- 1/2 cup beer, i use dark beer
- 2 tbsp white wine vinegar
- 1 tsp cumim
- 1/2 tbsp cayenne pepper
- 2 tbsp chili powder
- 1 chopped scallions
- 1 sour cream for garnish
- recipe was based on recipe from cookbook 'Inter Courses' by martha hopkins and randall lockridge
- rinse then drain soaked beans
- combine beans with water in large pot
- bring to boil over medium heat
- add the vegetables, seasonings, beer, vinegar to the beans
- simmer covered for 1.5- 2 hours until beans are tender
- garnish with sour cream and chives
- serve with rice, corn bread or tortilla chips
- maybe made nonveg by adding 1 lb of meat your choice
- may also be cooked in a slow cooker for 5 hours, just increase water to 5 cups.
