Shortbread

  1. Pre-heat oven to 300.
  2. With an electric mixer (a must), cream together butter, brown sugar & vanilla.
  3. Add flour and corn starch.
  4. Mix until smooth.
  5. Fold in mini chocolate chips (optional).
  6. Pour granulated sugar in a small bowl.
  7. Butter the bottom of a small glass and dip in sugar.
  8. Roll cookies into ball, a tablespoon per cookie.
  9. Place on cookie sheet and flatten with glass dipped in sugar.
  10. Bake for 20 minutes or until edges are lightly browned.
  11. * Important.
  12. Allow to cool for 5 minutes on cookie sheet or they will crumble.
