Achiote Citrus Marinade Recipe

  1. Combine 1/3 c. of the orange juice, the achiote paste, jalapenos, garlic, peppercorns and salt in a blender or possibly food processor.
  2. Puree till the peppercorns are completely crushed.
  3. Add in the cilantro and the remaining 1/3 c. orange juice and puree till smooth.
  4. This recipe yields about 1 1/2 c. of marinade.
