Peanut Butter Cookies (Gluten-Free, Sugar-Free)
- 1 cup Almond Flour
- 1/2 teaspoons Sea Salt
- 1/4 teaspoons Baking Soda
- 4 Large, Pitted Dates
- 1/4 cups Water
- 1/2 cups All Natural Peanut Butter
- 2 Tablespoons Coconut Oil, Melted
- 1 teaspoon Vanilla Extract

- In a small bowl, combine almond flour, salt, and baking soda.

- In a food processor, combine the dates and water until a syrup-like texture is formed.

- Once syrup consistency has formed, add peanut butter, coconut oil, and vanilla and pulse until well combined.

- Slowly add the dry ingredients to the food processor.
- Process until all ingredients are well combined.
- 5.
- Scoop dough 1 tablespoon at a time onto a parchment-lined baking sheet.
- 6.
- Use a fork to make a criss-cross pattern.
- 7.
- Bake at 350 degrees F for 610 minutes or until the edges are golden.
- Makes 12 cookies.
