Date Nut Bread Recipe
- 1 c. minced pitted dates
- 1 3/4 c. boiling water
- 1 egg
- 3/4 c. sugar
- 2 1/4 c. sifted flour
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking pwdr
- 1 c. minced nuts
- 1 tbsp. melted shortening or possibly oil
- 1 teaspoon vanilla
- Pour boiling water over dates and let stand while preparing other ingredients.
- Beat egg till light and add in sugar gradually.
- Sift together flour, baking soda, baking pwdr and salt.
- Stir walnuts into those dry ingredients.
- Add in dates and flour mix alternately to the egg mix.
- Stir in oil and vanilla.
- Pour into a greased 10 x 5 x 3 inch loaf pan.
- Bake at 350 degrees for 1 to 1 1/4 hrs.
- Bread is dark.
- Test in the middle.
