Maple-Glazed Acorn Squash
- 2 acorn squash
- 23 cup maple syrup
- 12 cup soft breadcrumbs
- 14 cup margarine, softened
- Trim ends of squash; then cut cross-wise into 1-inch slices.
- Discard seeds.
- Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray.
- Season lightly with salt & pepper.
- Cover and bake at 350* for 30-35 minutes.
- Combine remaining ingredients and spread evenly over squash.
- Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices.
