Maple-Glazed Acorn Squash

  1. Trim ends of squash; then cut cross-wise into 1-inch slices.
  2. Discard seeds.
  3. Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray.
  4. Season lightly with salt & pepper.
  5. Cover and bake at 350* for 30-35 minutes.
  6. Combine remaining ingredients and spread evenly over squash.
  7. Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices.
