Honey Chicken Macaroni With Cheese
- 1 (500 g) package macaroni (I use whole wheat)
- 2 tablespoons olive oil
- 12 teaspoon dried oregano
- 12 teaspoon dried parsley
- 2 garlic cloves, minced
- 2 onions, finley minced
- 2 -4 boneless skinless chicken breasts, diced
- 2 (798 ml) cans diced tomatoes, drained
- 14 cup liquid honey or 14 cup creamed honey
- 1 cup sharp cheddar cheese, grated
- Cook pasta according to directions.
- In a pot heat oil and saute onions, garlic, oregano and parsley (about 3mins.)
- Add chicken and cook about 3mins.
- Add honey mixing well to coat chicken and cook until caramelized.
- Add tomatoes and simmer 15-20 mins or until liquid is almost evaporated.
- Add pasta to mixture.
- Pour into baking dish, sprinkle with cheese and broil in oven until cheese is melts and browns lightly.
