Banana-Nut Muffins (No Processed Sugar)
- 1 34 cups flour (I prefer white whole wheat)
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 13 olive oil
- 12 cup date syrup
- 2 eggs, beaten
- 1 large mashed ripe banana
- 14 cup hot water
- 14 cup chopped walnuts or 14 cup pecans
- Mix together dry ingredients in large bowl.
- In separate bowl, add eggs, oil and date syrup until they are well-blended.
- Add in mashed banana.
- Incorporate the wet ingredients and hot water simultaneously into dry ingredients.
- Gently mix in nuts.
- Pour into 12-cup muffin tin and bake in 350 oven for approximately 17 minutes.
