Melt-in-your-mouth Matcha Soy Pudding

  1. Combine sugar and matcha in a bowl and mix well.
  2. Add a small amount from the measured soy milk, then mix in the eggs.
  3. From here, stir to dissolve in the sugar as you add the rest of the soy milk in batches.
