Melt-in-your-mouth Matcha Soy Pudding
- 250 ml Soy milk
- 2 to 3 tablespoons Matcha
- 1 Egg
- 2 tbsp Sugar
- 1 Kuro-mitsu (brown sugar syrup or molasses)
- Combine sugar and matcha in a bowl and mix well.
- Add a small amount from the measured soy milk, then mix in the eggs.
- From here, stir to dissolve in the sugar as you add the rest of the soy milk in batches.

- Chill in the fridge and serve.
- Adjust the amount of matcha to taste.
