Lebkuchen
- 1 1/2 lb. cake flour
- 1 lb. honey
- 1/2 lb. sugar
- 1/4 lb. brown sugar
- 3 well beaten eggs
- 1 lb. orange peel, chopped
- 1 c. chopped pecans
- 1/2 lb. flour
- 1 tsp. ground cloves
- 2 tsp. allspice
- 2 tsp. cinnamon
- 1 Tbsp. baking soda
- 1/2 lb. citron, chopped fine
- 1/4 lb. lemon peel, chopped
- 1 tsp. baking powder
- grated rind of 1 lemon
- 1/2 c. brandy
- Mix together the honey with 1/4 pound sugar.
- Boil, skim and cool.
- Then add sifted cake flour.
- In separate pan, mix the brown sugar and 1/4 pound white sugar, eggs, spices and soda which has been dissolved in brandy, citron, orange peel, lemon peel, grated lemon rind and baking powder.
- Mix the nuts with the all-purpose flour and add to the batter.
