Kalamata Relish
- 1 plum tomato
- 2 tbsp. pitted kalamata olives
- 2 tbsp. extra-virgin olive oil
- 1 tbsp. chopped fresh flat-leaf parsley
- 1/2 tsp. finely grated lemon zest
- 2 tsp. freshly squeezed lemon juice
- Coarse salt
- Freshly ground black pepper
- In a small bowl, stir together the tomato, olives, olive oil, parsley, lemon juice and zest until well combined.
