Pistachio Pesto Roasted Salmon

  1. Preheat oven to 425 degrees F.
  2. Rinse salmon fillets and pat dry.
  3. Place on lined baking sheet (I use foil for easy cleanup) or a glass roasting pan.
  4. Evenly distribute 1 1/2 teaspoon pesto onto each fillet.
  5. Place in the oven on the middle rack.
  6. Roast for 10-12 minutes (maybe more depending on the thickness of your fillet), until flesh flakes easily with a fork.
  7. Move to top rack of oven and broil on 425 degrees F for 1 minute, just until top reaches golden brown.
