Allspice Brandy Chicken Recipe
- 6 Tbsp. Butter
- 2 x Onions, diced
- 4 x Chicken breast halves
- 2 x Apples
- 1/2 c. Calvados
- 1/2 tsp Allspice
- 2 c. Apple juice
- 1/2 tsp Salt
- 1/4 tsp Freshly grnd black pepper
- 2 Tbsp. Flour
- Heat half the butter over medium heat in a large skillet.
- Add in the onion and saute/fry until tender.
- Remove from the pan and reserve.
- Peel, quarter and core the apples.
- Heat 1 tbsp butter in skillet and brown chicken breasts on both sides.
- Add in apples, Calvados, allspice, apple juice, salt and pepper to skillet.
- Cover and cook over low heat 20 min.
- Remove chicken to a platter and keep hot.
- Return onions to pan.
- Blend together remaining butter and flour.
- Stir into sauce and cook for 5 min until sauce is thickened.
- Pour sauce over chicken and serve immediately.
- Makes 4 servings.
