Mini Taco Pies

  1. Brown ground beef in a skillet, drain excess fat.
  2. Stir in Tex-Mex seasoning and water.
  3. Simmer for 10 minutes.
  4. Roll out pie crust to about 1/4 inch thickness and cut into 3-inch circles; my crust made 18 circles.
  5. Press each circle over the bottom side of a muffin tin, prick bottoms with a fork and bake at 400 degrees for 20 minutes, or until lightly browned.
  6. Place mini pie shells right side up on a baking sheet and fill with about 1/4 cup of seasoned ground beef.
  7. Sprinkle each pie with cheese.
  8. Bake for an additional 7-10 minutes or until cheese has melted.
  9. Serve over lettuce with sour cream, salsa and green onions.
